Spicy Cranberry Chutney

1/4 c. chopped dried apricots (snip with scissors)
1/2 c. brown sugar
1/2 c. light raisins - the gold ones(any kind will do!)
1 c. water
3 c. fresh or frozen cranberries - rinsed(I use dried !)
1 Granny Smith apple - chopped
1 tsp. lemon zest ( I used orange.. use what you have and if you havent any                                  thats ok too !)
1/4 c. lemon juice 
1/4 c. crystallized ginger - snip with scissors
1/2 tsp. red pepper flakes

In saucepan:
Bring to boil apricots, brown sugar, raisins and water. Reduce to simmer for 5 min.-- stirring occasionally.

Stir in cranberries, apple, zest -- simmer about 10 min. more.

Stir in lemon juice, ginger, red pepper flakes before removing from heat. Mixture should be somewhat thick.

Serve with cheese & crackers; OR as a side with Turkey,Chicken,Pork or Ham.

 

This quantity makes roughly a 15-16oz jar full.. I double the quantity and get 2 x 15oz jars and a little jar with about 3 ozs in

Absolutely yummy and very healthy ... serve with granary bread !

 

Red Pepper and Sundried Tomato Soup

Ingredients

1 onion, chopped
A dash of oil
4 Large red Bell peppers, deseeded and chopped
6 garlic cloves, minced
8 dried tomato halves, diced (about 3 ozs)
1/2 litre water
Salt and pepper

Instructions

Sweat the onion down slowly in the oil.

Add the peppers, garlic, tomatoes and water and simmer for 15-20 minutes.

Carefully pour into a blender and whizz the life out of it until you have a perfectly smooth vibrant soup.

Pour back into the pan, season with the salt & pepper and top up with enough water to bring it to the consistency you like. Reheat and serve

(I dont actually add any more water)

Prep Time: 15 minutes

Cook Time: 30 minutes

Foofy.. I wouldnt say no it isnt  Foofy.

Bell Peppers have flavour and no heat.. so its just taste.. and Sun dried tomatoes are just a concentrated tomato taste

Blueberry-Rhubarb Jam

  • 1 1/2 pounds blueberries
  • 1 pound trimmed rhubarb (leaves and tough bases cut off), cut into small pieces
  • 3 1/3 cups sugar
  • 2 tablespoons lemon juice

If the berries are frozen, let them thaw.

In a broad, heavy-bottomed pan, simmer the blueberries, covered, for about 5 minutes. Press them though the fine disk of a food mill.

Combine the berry puree in the pan with the rhubarb, sugar, and lemon juice. Cook the mixture over medium heat, stirring, until the sugar has dissolved. Raise the heat to medium-high, and boil the mixture, while still stirring frequently, until the rhubarb breaks down and a bit of the jam mounds in a chilled bowl, or until the temperature of the mixture reaches 221 degrees F. This should take no more than 10 minutes. Remove the pan from the heat.

Skim the foam from the jam, and ladle the jam into six sterilized half pint jars leaving 1/4 inch headspace. Close the jars, and process them for 5 minutes in a boiling-water bath.

Remove the jars to a rack or pad, and let them stand undisturbed for 24 hours, after which time the jam should be well set. Store the jars in a cool, dry, dark place.

Here is the recipe I found for Chockie Squash Cake!

Ingredients

1/2 cup vegetable oil
1 package cake mix, dark chocolate
1 teaspoon ground cinnamon
eggs
1 1/4 cups water
1 cup squash (shredded or finely chopped)
  chopped walnuts (1/4 cup, optional)

Directions

1. Preheat oven to 350°F. Grease and flour a 10" tube or bundt pan.
2. In a large bowl, combine cake mix and cinnamon.
3. Add eggs, water, and oil. Blend until combined, then beat with an electric mixer for 2 minutes on medium speed.
4. Fold in squash. Add nuts if you like.
5. Pour into prepared pan. Bake for 50 minutes to 1 hour, until cake springs back when lightly touched.

Notes

Other Ideas:

  • Use a greased 9x13-inch pan. Bake for 45 minutes.
  • To lighten cake, try 6 egg whites in place of whole egg.
  • Replace 1/2 cup oil with 1/2 cup applesauce.
